Introduction
Our pies and pastries Linbro facitlity is a highly automated factory based in Johannesburg.
Established in 1995, this first class facility produces dry and frozen bakery products including Tubeset, muffin batters, croissants, cinnamon scrolls, place and bake frozen preformed cookies, frozen pizzas, dry bakery mixes and ready-to-eat muffins, as well as frozen pies.
Through the offering of innovative products, combined with convenience and ease of preparation, this business has become the preferred supplier and leader in muffins to the South African food service market.
Duties & Responsibilities
- Monitoring and controlling the Quality Controllers and Quality Controller supervisors their respective duties.
- Assist in management of the food technologists' roles and responsibilities.
- Scheduling and prepare trials, moving trial recipes from NPD formal to Production format.
- Complete and send out trial reports as per trial completed and/or when required.
- Update production recipes as per requirement
- Prepare and schedule products for a travel test and send out reports.
- Complete Weekly WW reports and send out.
- Schedule and prepare Products for Nutri Testing on a monthly basis and send out report.
- Ensure product specifications are updated/reviewed as per current legislation and/or per update.
- Review new product or current product Artwork as per requirement or request.
- Ensure trials ran in production are managed, data collected and packing and labelling is done as per requirement. Ensure trial products are sent out for evaluation timeously.
- Assist NPD with general requirements eg Send raw materials, WIP filing, finished products timeously
- Update or review product QAS as per requirement or as per NPD schedule
- Fill in Marketing documentation as per new product launched or current and send out.
- Prepare samples on new products launched and send to NPD RMWC.
- Review and update product ingredients quid as per new product or current recipes.
- Review and update product specification on FPI, ensure certificates are updated when required. Implement new product specifications and ensure approval process is followed.
- Verification of process flows, and communication triggers the Food safety team.
- Assist with communication to customer on technical matters.
- Manage the growth and development of subordinates through skills transfer and controlled rotation within the technical function.
- Maintain exemplary departmental discipline.
- Inspire and motivate all internal customers towards improved and product quality - Cultivate a quality culture.
- Ensure that quality control in the factory consistently adds value, is innovative and is strictly maintained.
- Train, coach and mentor all staff on quality awareness, personal and factory hygiene, foreign object exclusion, allergen exclusion, glass breakage and high-risk procedures, cleaning practices etc.
- Ensure that all manufacturing and processing standards are up to date and issued/Displayed.
- Troubleshoot on miscellaneous technical issues in the plant.
- Investigate any issues pertaining to assigned lines.
- Take part in daily taste panels and address any issues pertaining to their particular lines.
- Ensure all paperwork has been completed. Perform daily administration of quality/process control documents, instituting corrective action as required.
- Assist with maintaining and upgrading the traceability system in the factory and highlight any deviations from the agreed system.
- Enforce identification and dating of all raw and packaging materials, WIP and finished goods.
- Initiate remedial, corrective and preventative action when required.
- Ensure that Woolworths QC samples are selected and forwarded as required.
- Ensure that proper operational methods and personnel practices are upheld in accordance with GMP and the Woolworths Code of Conduct.
- Undertake investigation into any customer complaints received.
- Communicate all complaints to the respective Supervisors and managers.
- Upgrading and maintaining documentation for particular lines.
- HACCP reviews on all new products
- Process audits on relevant lines as required in the problem-solving process.
- Coach relevant supervisory and operational staff during corrective action exercises.
- Compile and issue specifications (green) immediately upon adjusting either formulation or process.
- Review micro results on a daily basis and take necessary action.
- Review daily issues reported and take the necessary corrective action
- Prepare a weekly report
- Maintain cleaning standards as per the Woolworths code of conduct.
- Conduct daily inspections in the factory every morning to evaluate the standard of hygiene.
- Monitor proofing of the plant, with emphasis on exclusion rather than eradication.
- Participate and support Company's food safety and quality objectives.
- Report all problems regarding Food Safety to the QA Manager who will initiate and records actions.
Desired Experience & Qualification
- Grade 12 (Matric)
- National Diploma in Food Technology
- Knowledge of FSSC 22000 principles
- MS Office
- 3-5 years' technical experience in the field of Food Manufacturing Company
- Driver's license
- Willing to work shifts and weekends.
