About the Position

• An exciting opportunity is available for a talented and passionate Pastry Sous Chef to join the culinary team at a prestigious wine estate in Stellenbosch.
• The successful candidate will assist in overseeing the pastry section, ensuring the consistent preparation and presentation of high-quality desserts, pastries and baked goods. The role requires creativity, attention to detail and a passion for delivering exceptional culinary experiences.

 Key Responsibilities

• Assist the Head Pastry Chef with the daily operation of the pastry kitchen.
• Prepare, bake and present high-quality pastries, desserts, cakes and other sweet creations.
• Ensure consistency, quality and attention to detail in all pastry products.
• Develop creative and seasonal dessert menus in line with the estate's culinary standards.
• Supervise, guide and support junior pastry team members.
• Maintain excellent food hygiene, safety and cleanliness standards.
• Monitor stock levels, manage ingredients and minimise wastage.
• Ensure effective preparation and smooth kitchen operations during service.
• Maintain high standards of plating, presentation and portion control.
• Assist with ordering, stock rotation and cost control.

 Minimum Requirements

• Previous experience in a Pastry Chef or Pastry Sous Chef position.
• Relevant culinary qualification in pastry or baking will be advantageous.
• Strong knowledge of pastry techniques, baking methods and dessert preparation.
• Excellent organisational and time-management skills.
• Ability to work under pressure in a fast-paced kitchen environment.
• Strong leadership and communication skills.
• Creative flair and a keen eye for detail.
• Willingness to work flexible hours, including weekends and public holidays.
