About the position

PURPOSE:
To optimise the performance of the Deli, Fish Shop, Sushi Bar and Coffee Shop by ensuring that the in-store execution is according to business strategy, guidelines and standards. The ideal candidate must have well developed interpersonal skills, the ability to build long term relationships based on trust and technical expertise and driven by achieving challenging goals and targets.

REQUIREMENTS:

  • Matric (essential)
  • Cullinary / Restaurant Management experience (essential)
  • Managerial experience (essential)
  • Ability to work retail hours (essential)
  • A minimum of 5 to 10 years retail, food preparation and management experience (essential).

STORE STANDARDS:

  • Set and monitor standards in all departments
  • Ensure that Standard Operating Procedures are executed.

DUTIES & RESPONSIBILITIES:

  • Responsible for the daily operation of the departments, ensuring every department is adequately staffed and stocked.
  • Responsible for all food preparations, ensuring quality of products, service, cleanliness of the departments and food standards are maintained at all times.
  • Hold supervisors and team members accountable for delivering outstanding customer service.
  • Build a positive work environment of outstanding teamwork, mutual respect and good morale.
  • Maintain proper product assortment, merchandising and inventory control.
  • Sustain exceptional levels of knowledge and awareness of relevant competitors and industry trends.
  • Advanced knowledge of products, buying, pricing, merchandising and inventory management.
  • Indepth knowledge of proper food handling, food storage and sanitation procedures is essential.
  • Extensive product knowledge.
  • Identify and work with management to resolve departmental issues.
  • Keep waste to a minimum through proper production, tracking all waste and discards to ensure accuracy and accountability.
  • Maintain correct temperatures at all times.
  • Ensure all tools, utensils and equipment is correctly cleaned and maintained.
  • Prepare weekly rosters for all departments.
