CDP / Chef de Partie

About the position

A client within the leisure industry is looking to employ a CDP to be based at their premises in Kempton Park. The role is generally an 8 - 5 job but there are some evenings and weekends that this person would need to work.

The role involves handling the daily preparation of food items for the staff of the company and / or a specific area in a kitchen, cooking meals and plating food orders in an efficient, healthy and attractive manner.

• Prepare and present food using correct plate presentation techniques
• Coordinate and complete menu items preparations
• Assist with setting up catering
• Prepare work checklist and organize workstations for each shift
• Check and maintain fridges/freezers and storage areas for cleanliness, quantities, and quality of food
• Requisition of food in line with required approval and / or policy
• Take proper care of ovens, fryers, griddles, utensils, and other equipment
• Help train or offer direction to apprentice or intern chefs
• Prepare stocks, soups (warm and cold), sauces, bisques, or mayonnaise for serving
• Prepare and cook meat, poultry, fish, and seafood
• Wash, peel, cut and seed fruits and vegetables and prepare for consumption
• Prepare el fresco meals for boardrooms and meetings
• Clean responsible areas and ensure Health and Safety standards of the company or other regulatory bodies (whichever is more limiting) are always adhered to; and
• Assist with ad hoc tasks and duties as and when required

Qualifications and requirements
Grade 12 or equivalent coupled with a culinary school qualification and at least 1 year working experience
