HEAD CHEF
MALTA, POSITION TO MOVE AND LIVE IN MALTA

One of our clients, a fast-paced restaurant in central Malta, is looking for a Head Chef. This is a phenomenal opportunity for a chef to have creative freedom on menu design using the best ingredients available on the market. As a Head Chef you will also be required to ensure that all the operational, quality, and administrative functions are carried out properly.
Tasks:
- Manage all aspects of the kitchen including operational, quality and administrative functions
- Actively seek verbal feedback from customers on a regular basis and respond to all guest queries in a timely and efficient manner
- Manage the provision of food to Food and Beverage outlets and taking action where necessary to ensure compliance with current legislation
- Ensuring adequate resources are available according to business needs
- Resourcefully solve any issues that arise and seize control of any problematic situation
- Ensure team members have an up-to-date knowledge of menu items, special promotions, functions and events
- Order supplies to stock inventory appropriately
- Ensure maintenance, hygiene and hazard issues are dealt with in a timely manner
- Maintain a positive and professional approach with co-workers and customers
- Control costs without compromising standards, improving gross profit margins and other departmental and financial targets
- Manage financial performance of the department so all planning is in line with companies objectives and compile yearly budgets
- Ensure food control systems are adhered to so margins are on target
- Regular review of all menus with Food and Beverage manager to confirm offerings are in line with market trends
- Ensure monthly communication meetings are conducted and post-meeting minutes generated
- Manage staff performance issues in compliance with company policies and procedures
- Recruit, manage, train and develop the kitchen team
- Ensure that staffing levels are maintained to cover business demands
- Maintain good communication and work relationships in all premises
Requirements
- Requires excellent communication skills, both verbal and written. Kitchen terminology required.
- Documented cooking experience with heavy emphasis on classical methods and regional cooking in a high quality culinary environment. Culinary education applies to experience.
- Formal culinary training diploma, apprenticeship papers, or equivalent experience preferred.
- Previous Supervisory skills required.
- Knowledge of products, uses and availability.
- Remain current with products and industry trends. Take personal responsibility to advance skills and knowledge.
